Job Specifics
Minimum Qualifications Candidates must have three years’ experience in large-scale cooking, one year of which must have included regular supervision of subordinate employees.
Duties Description Duties to be performed may include, but are not limited to, the following:
• prepares and cooks a variety of foods for residents within a State facility.
• reviews menus to determine type and quantity of food to be prepared and plans cooking schedule so foods are ready at prescribed time.
• measures, mixes, cuts, grinds, chops and seasons ingredients according to State recipes using a variety of hand and power kitchen utensils.
• bakes, roasts, broils, fries and steams food as called for in recipes.
• observes and tastes food and adds ingredients and seasoning to improve texture and flavor, tests food for completion of cooking time and adjusts heat controls; carves and divides portions into individual servings.
• arranges for distribution of food by placing into service trays or packing food for distribution to separate dining areas.
• may supervise a small kitchen staff of Food Service Workers 1 and 2 by: (a) making specific work assignments, (b) directing general cleaning after each meal, (c) providing oral and written instructions regarding materials, utensils and procedures to be performed, (d) overseeing and inspecting performance to ensure that instructions, procedures and standards are observed.
Additional Comments Background Investigation/Justice Center Review:
Prospective appointees will be:
1) Checked against the Staff Exclusion List (SEL) maintained by the Justice Center for the Protection of People with Special Needs. Prospective employees whose names appear on the SEL as having been found responsible for serious or repeated acts of abuse or neglect will be barred from appointment and may have their names removed from the eligible list(s) for the title(s) if applicable.
2) Investigated through a Criminal Background Check (CBC) which includes State and federal Criminal History Record Checks. All convictions must be reported; conviction of a felony or misdemeanor, or any falsified or omitted information on the prospective appointee’s employment application, may bar appointment or result in removal after appointment. Each case will be determined on its own merits, consistent with the applicable provisions of State and federal laws, rules, and regulations. Prospective employees will be fingerprinted in order to obtain a record of their criminal history information, and may be required to pay any necessary fees.
3) Screened against the Statewide Central Register of Child Abuse and Maltreatment (SCR). Prospective employees may be required to pay any necessary fees. Additionally, prospective employees whose names are indicated on the SCR may be barred from appointment.

This position is eligible for a Downstate Adjustment of $3,026.
