Minimum Qualifications Three years experience in large food service operation, offering a full range menu servicing 300 meals daily, one year of which must have included regular supervision of subordinate employees or working inmates or patients. Completed academic work in a degree program for food management, or hotel management with a concentration in food preparation, may be substituted on a year for year basis. Up to a maximum of two years for the non-supervisory experience.
Duties Description Supervise inmates in proper meal preparation. Including following posted cleaning schedules to ensure proper cleanliness and sanitation of kitchen. Monitor temperatures of dish washers, coolers and freezers. Supervise assembly of all satellite feeding. Ensure proper food temps and portion sizes. Ensure diet trays are complete and accurate. Monitor serving lines to ensure proper portion control. Control food costs by careful food prep and proper use of any leftovers. Aid and assist Head Cooks with receiving daily food/supply requisitions. Ensure compliance with Accreditation standards.
