Salary RangeFrom $41130 to $50405 Annually
Minimum Qualifications Three years of experience in large-scale cooking, one year of which must have included regular supervision of subordinate employees or working inmates.
Duties Description Prepare and cook a variety of foods for residents, employees or students with in a state facility. Incumbents prepare and cook food and usually supervise a kitchen staff in meal preparation and cooking, and in the cleaning of the kitchen and pantry areas. Cooks have frequent oral communications with all levels of the kitchen staff giving and receiving instructions, information and advice regarding preparation, cooking, and serving food. From time to time they also have oral communications with program staff explaining food preparation and service procedures. Cooks use all the cooking utensils and equipment found in a kitchen such as blenders, bowls, grills, grinders, kettles, knives, measuring devices, mixers, ovens, slicers, etc.
• Review menus to determine type and quantity of food to be prepared.
• Plan cooking schedule so food is ready at prescribed time.
• Draw required foodstuffs from kitchen storage areas.
• Measure, mix, stir, cut, grind, chop and season ingredients according to State recipes using a variety of hand and power kitchen utensils.
• Bake, roast, broil, fry and steam food as called for in recipes.
• Observe and taste food and add ingredients and seasoning to improve texture and flavor.
• Test food for completion of cooking time and adjust heat controls.
• Carve and divide portions into individual servings.
• Prepare special foods for residents requiring special diets.
• Arrange for distribution of food by placing into service trays or packing food into hot boxes for shipment to separate dining areas.
• Supervise a small staff in distributing food in a cafeteria setting (FSW1 and FSW2).
• May personally serve main course of meal in a cafeteria setting.
• Make specific work assignments in kitchen and pantry areas.
• Direct the general cleaning after each meal.
• Provide oral and written instructions regarding materials, utensils and procedures to be performed.
• Demonstrate proper preparation and cooking.
• Oversee and inspect performance to insure instructions, procedures and standards are observed.
• Insure that proper sanitation procedures are always followed.
Additional Comments These are rotating shifts that include weekends. The kitchen is operational seven days a week. Work hours are varied. Occasional overtime may be required.
NOTE: Support of operations during times of emergency and disaster from State Emergency Operations Center (EOC), state field offices and/or local deployments may be required, which would result in a change and/or increase in working hours, locations and/or duties.
